Maple Sugar Kisses
2 cps maple sugar
1 cp brown sugar
1/2 cp water
1/8 tsp salt
1 1/2 tsp vanilla
1 egg white
3/4 cp shredded cocoanut
1 - Combine the maple sugar and the brown sugars, water and salt; and stir until the sugar dissolves.
2 - Cook gently without stirring until a little when tried in very cold water forms a soft ball.
3 - Remove from the heat; add the vanilla and pour into the egg white, beaten stiff.
4 - Continue beating until the mixture begins to thicken; then fold in the cocoanut and drop by
half tablspoonfuls pyramid fashion onto waxed paper.
