Refrigerator Rolls III
2 yeast cakes
1/4 cp lukewarm water
1/2 cp sugar
1 cp mashed potatoes
1 cp shortening
1 tsp salt
1 tsp soda
1 qt milk, (scalded)
13 cps flour sifted
melted shortening to brush on top of dough
1 - Soften yeast in lukewarm water
2 - Place sugar, mashed potatoes, shortening, salt and soda in mixing bowl
3 - Add scalded milk, cool to lukewarm.
4 - Add softened yeast and 1/2 the flour.
5 - Beat until the batter is smooth.
6 - Cover and let stand in a warm place until light and fluffy.
7 - Add remaining flour and mix well.
8 - Place in large well greased bowl.
9 - Brush top of dough with melted shortening.
10 - Cover and store in refrigerator until ready to form into desired shape of rolls.
11 - Replace unused portion in refrigerator.
12 - Bake at 375 degrees for 20 minutes.
