Date Square Cookies
1 1/2 cps quick cooking rolled oats
1/8 tsp salt
1 1/2 cps flour
1/2 tsp baking powder
1 cp light brown sugar
2 cps dates
3/4 cps butter or spry
juice of 1/2 lemon
1/2 lb sugar
1/2 cp water
1 - Dice dates and apricots, add water and cook until tender.
2 - Add sugar and cook until mixture is clear.
3 - Add lemon juice and salt, let cool.
4 - Mix other ingredients together as for pie crust, working with fingers.
5 - When evenly blended, place a little more than half of the mixture in bottom of pan and
up the sides which have been greased, press firmly, space date mixture over, then sprinkle
rest of dough mixture on top and press lightly.
6 - Bake in moderate oven for 30 minutes.
7 - When dool cut in squares.
