Chocolate Angel Food Cake
12 egg whites
2 cps sugar, white
5 tbsp cocoa
1 tsp cream of tartar
4 tbsp cold water
1 tsp vanilla
1 cp Swansdown cake flour
1 - Beat egg whites to a stiff froth then add cream of tartar, continue beating and add water, and beat.
2 - Then add sugar and cocoa sifting together five times.
3 - Add vanilla and flour, a little at a time.
4 - Bake in an ungreased angel food cake pan, which has been rinsed with cold water.
5 - Bake 1 hour starting in slow oven gradually increasing heat.
