Strawberry Chiffon Pie
4 egg yolks
2/3 cp sugar
1/2 tsp salt
3 tbsp lemon juice
1 tbsp gelatin
1/4 cp water
4 egg whites
2 tbsp sugar
1 1/2 cp strawberries and juice
1 - Beat yolks well, add 2/3 cp sugar, salt, lemon juice, cook in top double boiler, stirring until lke custard.
2 - Remove from fire, beat, add gelatin which has been softened in cold water.
3 - Stir well, add berries and juice, chill.
4 - Beat egg whites until stiff, add 2 tbsp sugar, fold in chilled mixture.
5 - Turn into baked shell, chill until set.
6 - Before serving spread with whipped cream, with 1 tsp powdered sugar.
7 - Quick frozen berries thoroughly thawed may be used. Use 1/2 cp sugar instead of 2/3 cp.
