Mock Turtle Soup
1 calf's head
3 qts boiling water
1/3 cp diced carrots
1 cp diced onions
1/2 cp flour
1/4 cp butter
2 cps brown stock juice of 1/2 lemon
1 - Take calf's head and clean it thoroughly. Soak 1 hour in enough water to cover it.
2 - Put into 3 qts boiling water seasoned with salt and pepper, adding 1/3 cp diced carrots and 1 cp diced onions.
3 - When the head has cooked until perfectly tender, take it out, allowing stock to go on boiling until
there is hardly more than a quart.
4 - Strain this off, and put with it 1/2 cp flour which has been browned in 1/4 cp melted butter in a saucepan.
5 -Now put in 2 cps of brown stock, and diced meat from cheeks of calf's head and egg-balls.
6 - When about to serve, stir in juice 1/2 lemon, and add salt and pepper to taste.
