1 qt white stock
1/2 cp rice
1 tbsp cream
2 egg yolks
1 - In 1 qt of shite stock, boil 1/2 cp rice until the rice is soft.
2 - Press through a sieve, and put back over anything that runs through.
3 - Into 1 tbsp cream stir the beaten yolks of 2 eggs.
4 - Slowly stir into this mixture the hot soup, allowing it to thicken but not to boil.
5 - Before serving, season with salt and pepper
