1 tbsp butter
1 scant tbsp flour
1 tsp chopped onion
1 pt hot milk
4 potatoes(either white or sweet)
salt & pepper to taste
2 egg yolks, beaten
1 - In 2 tbsp butter, cook 1 scant tbsp flour with 1 tsp chopped onion.
2 - Stir into this mixture 1 pt hot milk, and add the shole to 4 potatoes (either white oy sweet)
which have been boiled and mashed.
3 - Rub all through a stariner, and after seasoning to taste with salt and pepper, put over the fire again.
4 - More milk or hot water may be needed to thin soup, if necessary.
5 - Immmediately before serving stir in the beaten yolks of 2 eggs.
