1 tbsp butter
3 large onions, sliced
3 tbsp flour
1 pt boiling water or stock
1 qt scalded milk
3 boiled potatoes that have been mashed
1 - In 1 tbsp butter, fry until soft 3 large onions, sliced.
2 - Put in 3 tbsp flour, stirring until well cooked.
3 - Slowly pour in 1 pt boiling water or stock.
4 - Mash 3 potatoes which have been boiled and over them pour slowly 1 qt scalded milk.
5 - Then put this into the onion mixture, stirring thoroughly.
6 - Serve very hot with croutons of toast and a sprinkling of chopped parsley.
