Cream of Asparagus Soup
2 bunches green asparagus
1 pt cold water
3 pts soup stock
1 slice onion
3 tbsp flour
3 tbsp butter
salt and pepper
1 - Take 2 bunches of green asparagus, wash and drain
2 - Cut off the tips.
3 - Over the stalks pour 1 pt cold water and boil them for 5 minutes.
4 - Then drain them and add 3 pts soup stock and 1 slice onion.
5 - After this has boiled for 30 minutes, rub asparagus through a sieve.
6 - Mix until smooth 3 tbsp flour in 3 tbsp butter and stir well into the hot stock.
7 - Then put in the asparagus tips.
8 - If necessary, add salt and pepper
9 - The soup may be served in bouillon cups, with a tbsp of whipped cream and a fes tips of asparagus on the top of each cup.
