Puree of Lettuce
4 heads of lettuce
2 or 3 tbsp butter
2 or 3 tbsp flour
1qt white stock, or part milk and part stock
2 tsp lemon juice
1 - Wash carefully 4 heads of lettuce; pull off and cut up all the good outer leaves for the soup,
setting the hearts aside for salad.
2 - Cook together until smooth 2 or 3 tbsl of butter and the same quantity of flour, and stir into
1 qt white stock or part milk and part stock, makingn a white sauce.
3 - Cook the lettuce leaves in a covered kettle until tender; then press them thbnrough a sieve
and put them into the white sauce, seasoning to taste.
4 - Now add 2 tsp lemon juice and beat with a beater before serving
