2 qts spinach
1/4 tsp powdered sugar
1/8 tsp soda
4 cps white stock
1/3 cp flour
1/4 cp melted butter
2 cps milk
salt & pepper
1 - After washing and picking over 2 qts spinach, cook it 1/2 hour in boiling water containing 1/4 tsp powdered sugar and 1/8 tsp soda.
2 - When it has been drained, chopped and rubbed through a sieve, add 4 cps white stock, let it heat to the boiling point,
bind with 1/3 cp flour mixed well with 1/4 cp melted butter.
3 - Then stir in 2 cps milk, and season with salt and pepper.
