1 qt oysters
1 cp cold water
4 cps scalded milk
salt & pepper
4 tbsp butter
1 - Take 1 qt oysters, drain off the liquor, and clean oysters by pouring them in a colander 1 cp cold water
and picking out any pieces of shell.
2 - Take oyster liquor and let it heat to the boiling point.
3 - After straining it through a double cheesecloth, put in the oysters and cook gently until they look plump,
and their edges begin to curl.
4 - Add 4 cps scalded milk, season with salt and pepper, and stir in 4 tbsp butter.
5 - Cook 1 minute and serve at once with oyster crackers.
