1 qt clams
2" square of salt pork
1 onion, sliced
4 cps potatoes cut in 3/4" dice
salt (if needed)
4 cps milk
4 tsp butter
1 - Clean, pick over, and drain 1 qt clams, removing all pieces of shell.
2 - Cut into small pieces a 2" square of fat salt pork; try it out, and put with it 1 onion, sliced; fry it for 5 minutes; then
straqin into a saucepan.
3 - Add 4 cps potatoes cut in 3/4" dice, the clam liquor heated, and water enough to cover.
4 - Season with pepper, thyme and salt if needed.
5 - Cook until potatoes are tender, then add 4 cps milk, the clams cut into pieces, 4 tsp butter, and last 8 crackers.
6 - The clams should not be cooked longer than 3 minutes.
