3 lb shad
1 tbsp olive oil
salt & pepper
1 - Take a 3 lb shad and split it.
2 - Before cooking let it lie for about 1 hour on a platter with a tbsp of olive oil and a little salt and pepper.
turming it from time to time.
3 - Have the broiler well greased and, after browning the fish lightly on both sides, let it cook slowly
for 10 or 15 minutes, turning it often.
4 - When ready to serve, remove the bone, spread with butter, adding salt and pepper if needed and
reheat before placing on platter.
