Broiled shad or Mackerel Roe
shad or mackerel roe
salt & pepper
1/4 cp butter
1/2 fbsp finely chopped parsley
3/4 tbsp lemon juice
1 - After wiping and seasoning with salt and pepper, cook on a greased broiler, letting each side broil 5 minutes.
2 - Make a butter sauce, rubbing into it 1/2 tsp salt, a little pepper and 1/2 tbsp finely chopped parsley,
then adding very slowly 3/4 tbsp lemon juice.
