3 tbsp butter
1 tbsp lemon juice
1/2 tsp pepper
1 - If the smelts are large, cut along the belly and clean out the entrails.
2 - In a dish on the back of the stove melt 3 tbsp butter, and add 1 tbsp lemon juice, 1 tbsp salt and 1/2 tbsp pepper.
3 - When the fish are cleaned and well wiped, roll them in butter, then lightly in a plate of flour.
4 - Broil over a clear fire for 4 or 5 minutes.
