roe of shad, mackerel or flounder
1 tbsp lemon juice or vinegar
1 egg cracker crumbs
1 - Take the roe of shad, mackerel, or flounder and parboil it in salted water to which has been added
1 tbsp lemon juice or vinegar for every quart of water.
2 - After draining and cooling, take out all the pieces of membrane, roll in egg that has been well beaten,
then in cracker crumbs, seasoning with salt and pepper before frying in deep fat.
