2 cps lobster meat
1/2 cp bread crumbs
1 hard-boiled egg
2 tsp lemon juice
1 tbsp flour
1 tbsp butter
1 cp milk
1 - To 2 cps lobster meat dut into dice add 1/2 cp breadcrumbs, 1 hard-boiled egg, chopped fine, 2 tbsp lemon juice.
2 - Season well with salt, cayenne pepper and nutmeg.
3 - Make a white sauce, using 1 tbsp flour, 1 tbsp btter, and 1 cp milk.
4 - Put the sauce with the lobster mixture.
5 - With the paste thus made, fill scallop-shells, sprinkling the tops with bread-crumbs.
6 - Brown in very hot oven.
