Boiled Corned Beef
1 - Into the kettle with the corned beef put enough cold water to cover the meat.
2 - Leyt it heat slowly to the boiling point, then drain off the water.
3 -Cover the meat with hot water and let it cook slowly until it is tender.
4 - Leave the meat in the water a little while to cool.
5 - If it to be served cold, takem it from the water when it has cooled slightly, put it on a dish
and cover it with another dish upon which you can place a weight.
6 - When the meat is cooled under pressure,m it fcan be sliced more evenly.
