Beef a la Mode
4 lbs beef from the round
2 onions, sliced
1/2 cp diced carrots
1/2 cp diced turnips
1 - Take 4 lbs of beef from the round, tie it in shape with strips of cloth, and into incisions made with a sharp knife
press strips of salt pork; then dredge it with flour.
2 - In 2 tbsp beef drippings in a hot saucepan bron the meat on all sides and dredge with flour, salt,and pepper
before putting it in the kettle with 2 onions sliced, and 1/2 cp each of diced carrots and turnips and enough
boiling water to half-cover the beef.
3 - Let it simmer in the closely covered kettle about 4 or 5 hours, until tender adding more water if needed.
4 - When the meaqt and vegetables have been taken out skim the fat from the liquid and make a gravy by
thickening this liquid with 1 tbsp flur browned in 1 tbsp butter.
