2 or 3 lbs round of beef
2 tbsp melted butter
1 chopped onion
1 chopped carrot
1 tbsp chopped parsley
1/2 cp chopped celery
1 cp canned tomatoes
1 - Use 2 or 3 lbs of round of beef.
2 - If tender, cook whole, otherwise cut into cubes.
3 - Put some drippings into a hot frying pan and brown the meat in this;then place in a tightly covered kettle
or roaster, pouring it over the whole contents of the frying pan.
4 - Let it cook slowly 2 hours.
5 - In 2 tbsp melted butter brown 1 chopped onion, 1 chopped carrot and put them with 1 tbsp chopped parsley,
1/2 cp chopped celery and 1 cp canned tomatoes, heating them well and seasoning with salt and paprika.
6 - Add this sauce to the meat, and let it cook 1 hour longer.
