1 - The tenderloin taken from under the sirloin of beef, is known as the fillet of beef.
2 - Cut away the skin and fat and all muscle and ligaments, then shape the fillet andn fasten with a skewer
3 - Lard the upper suyrface with strips of salt pork.
4 - After dredging with salt, pepper and flour, place the meat in a hot oven, 20 or 30 minutes.
5 - Serve with mushrooms or tomato sauce.
