3 lbs lean veal, chopped fine
1/2 lb fat salt pork
1 cp cracker crumbs
2 tsp salt
1/2 tsp pepper
1/2 cp cold water or stock
1/2 tsp sage
1 - With 3 lbs lean veal, chopped fine, and 1/2 lb fat salt pork, chopped fine, mix 1 cp cracker-crumbs
seasoned with 2 tsp salt and 1/2 tsp pepper, 1/4 cp water or stock, 1 egg and 1/2 tsp sage. 2 - Press firmly into a small buttered bread-pan to form a loaf.
3 - Let it cook in a moderately h0ot oven for 2 or 3 hours, basting from time to time with stock or water
in which butter has been melted.
4 - When cool, take from pan and cut into thin slices before serving.
