Leg of Mutton - Boiled
leg of mutton
1 tbsp salt
capers or chopped parsley
1 - After wiping, put meat in kettle with enough boiling water to cover it.
2 - After boiling 5 minutes, skim; then let it simmer until the meat is tender.
3 - Season with 1 tbsp salt when the meat is about half done, allowing 15 minutes to the pound.
4 - Serve with a white sauce to which capers or chopped parsley have been added.
5 - The water in which the mutton is cooked should be used for soup.
6 - Soup vegetables may be cooked in it with the meat.
