Lamb or Mutton Chops

crumbs of bread or cracker
1 - French chops are cut from the breast; but chops from the loin or shoulder may be used instead.
2 - To broil chops, scrape them clean and trim off some fat, then on a greased broiler cook them from 8 to 10 minutes, turning often.
3 - Salt and pepper them and moisten with a little butter.
4 - Chops may be cooked in a very hot frying pan wich has been greased with a bit of fat.
5 - SWear both sides promptly,m and turnn frequently.
6 - Cook 8 minutes or longer if you prefer them better done.
7 - Or the copns may be breaded. Dredge with salt, pepper and flour, thenn in crumbs of bread or cracker; fry in hot oven and drain.
8 - They may be served with tomato sauce.
