Baked Pork Tenderloin
1 - Take the tenderloin and slit it almost through, to make it lie flat,
then dust it with salt and pepper.
2 - Prepare a dressing of bread-crumbs by adding to the crumbs salt, pepper,
sage, a little onion juice and enough melted butter to moisten them.
3 - Lay the dressing on the tenderloin, fold the meat over and sew up
so as to keep the dressing enclosed.
4 - This should be baked in a hot oven 45 minutes.
5 - Baste often with a little boiling water in which 2 or 3 tablespoons
of butter have been melted.
6 - The gravy, shen thickened, should be poured over the meat.
