1 tbsp butter
2 tsp chopped onion
1 tbsp curry powder
2 tbsp flour
2 cps hot milk
1 - In 1 tbsp butter brown lightly 2 tsp chopped onion, then stir in 1 tbsp curry powder which has been mixed
with 2 tbsp flour and let it cook until smooth.
2 - If the sauce is to be used with chicken, eggs, fish, etc., add next 2 mcps hot milk, stirring un til it hasw boiled
for 1 or 2 minutes.
3 - If the sauce is to be used for warming up cold meat, substitute stock or water for the milk.
4 - In either case, season with pepper and salt.
