Chicken a la Maryland
1 - Take a young chicken and, after cleaning and disjointing, leavingn the breast whole, sprinkle well with
salt and pepper, roll in flour, then dip in beaten egg and cover withn soft bread- or cracker-crumbs, dotting
pver the surface with pieces of butter.
2 - Let it bake in a well greased dripping pan in a hot oven for about 30 minutes, basting after 5 minutes with
1/3 cp of melted butter.
3 - Serve on a platter with 2 cps white sauce with a little chopped parsley added.
