Mexican Style Kidney or Lima Beans
1 tbsp fat
1 slice green pepper, chopped
1 slice onion, chopped
1 cp strained tomato
1/2 tsp salt
2/3 cp cooked dried beans
1 - Melt 1 tbsp fat and in it cook for a few minutes 1 slice each of green pepper and onion, chopped.
2 - To this add 1 cp strained tomato and 1/2 tsp salt.
3 - When this saquce has begun to boil, put with it 2/3 cp of cooked dried beans.
4 - After simmering for 15 to 20 minutes it wikll be ready to serve.
5 - Then sprinkle with chopped parsley
