1 - Wash the beets well and cut off the leaves, but be careful not to break the skin.
2 - Put them on boiling water to cook until tender, keeping them well covered with water.
3 - If the beets are old they will take 3 or 4 hours of cooking, while young beets take only 1 hour.
4 - When cooked, drain and place in cold water before rubbing off the skin.
5 - To serve young beets, cut them in quarters and season with butter, salt, and pepper and,
if desiredc a little vinegar.
6 - Slice old beets and pickle them in vinegar.
