1 - Wash the carrots and scrape them.
2 - If they are very young, they may be left whole or cut lengthwise
3 - If not, slice them across in thin rings.
4 - Let them cook in boiling water until tender, adding salt when they are partly cooked.
5 - If desired, put 1 tsp sugar into the water before cooking.
6 - When the carrots are tender, drain and serve hot, seasoned with butter, pepper and salt.
7 - Or serve them ijn a cream sauce, garnished with chopped parsley.
