Scalloped Cauliflower with Egg or Cheese
hard cooked eggs
1 - Take a medium-sized cauliflower and break it into separate bunches of flowerets before boiling.
2 - When tender, drain.
3 - Into a greased baking-dish first put a layer of cauliflower then a layer of slices of hard-cooked eggs,
then a layer of white sauce, crowning the dish with a layer of bread-crumbs.
4 - Let it bake until the crumbs are brown.
5 - If preferred, grated cheese may be substituted for the eggs.
