Baked Stuffed Cucumbers
4 tbsp bread crumbs
2 tbsp grated Parmesan cheese
1 - To prepare the cucumbers, when they have been wiped and pared, cut them crosswise in pieces
about 2 inches long and take out the seeds.
2 - With 2 tbsp ham chopped fine mix 4 tbsp bread crumbs, then 2 tbsp grated Parmesan cheese, adding
salt, pepper and cayenne to taste and enough tomato sauce to moisten the mixture.
3 - Fill the cucumber cups (set in a shallow pan) with the mixture and pour chicken stock around them.
4 - Allow 30 minutes for baking them; then cover the tops with buttered bread-crumbs and put in over
again to brown the crumbs.
