To Prepare Mushrooms
1 - If the stalks are both tender and solid, when they have been cut off, scrape or peel them and cut
onto pieces to be cooked with the caps.
2 - When the caps have been pared, put them with the cut-up stems into a dish with the juice or 1/2 lemon.
3 - If the stalks are not tender and solid, throw them away.
4 - Be careful not to cook mushrooms too much or they will be tough.
