Stewed Okra, Spanish Style
50 good-sized okra pods
1/4 lb lean ham 1 tbsp flour
1 tbsp butter
1 - When 50 good-sized okra pods ave been washed and had both ends of each pod cut off, let them simmer
in a covered saucepan with 1/4 lb lean ham chopped fine, ahnd enough stock and stewed tomato to cover the mixture.
2 - Add a little salt and pepper.
3 - When the okras are tender, rub together until smooth 1 tbsp flour and 1 tbsp butter and stir them into the
above mixture until it thickens.
4 - Serve garnished with chopped parsley
