Stuffed Onions II
1 qt medium-sized onions
soft bread crumbs
cooked meat or chicken
hard cooked eggs
1 - After peeling 1 qt of medium-sized onions, parboil them by letting them cook
in boiling salted water for 10 minutes.
2 - When they have cooled a little, take out part of the centers without breaking the root end.
3 - Take the parts of the onion you removed and chop them fine, adding equal parts of soft breadcrumbs,
bits of finely-chopped cooked meat or chicken and seasoning of salt and pepper.
4 - Mix all together, moistening with melted butter or cream.
5 - When the onions have been stuffed with the mixture, set them closely side by side in a baking dish
well buttered and sprinkle buttered bread crumbs over the top.
6 - Or the stuffed onions may have white sauce puored around them in the baking dish with chopped
carrot, parsley, and hard cooked egg forming a layer over all.
7 - In either case, they should be baked until soft abd brown in a moderate oven.
