Creamed Oyster Plant (or Salsify)
1 cp milk
1 tsp flour
1 -When the oyster plant has been washed and scraped, it should be dropped immediately
into cold water in which there is a little lemonn juice or vinegar.
2 - Then cut into thin slices and let it cook until soft in boiling water, adding salt shen the oyster plant is partly cooked.
3 - When soft, drain and serve in white sauce.
4 - Or, after it has drained pour over it 1 cp milk, heat, and add 1 tsp flour, 1 tbsp butter, aslt and pepper.
5 - After cooking for 5 minutes, serve on slices of buttered toast.
