1 - If the parsnips are not young, remove the woody center.
2 - Otherwise, simply wash and scrape them and cut them into slender finger-like pieces
about 2 inches long before cooking them in boiling salted water.
3 - When they are soft, drain them and serve with melted butter, drawn butter or cream sauce.
4 - The parsnips may be cut in dice-shaped pieces before cooking, if preferred.
