2 tbsp flour
1/2 tsp salt
1 - After scraping, slicing and boiling parsnips until tender, drain and mash them, taking out all the tough parts.
2 - Then for every cupful of parsnips take 2 tbsp flour, 1/2 tsp salt and 1 egg well beaten.
3 - Mix all together and make of the mixture small balls before frying in very hot fat.
