1 -If the potatoes are old it is well to let them soak in cold water for about an hour before boiling.
2 - Choose potatoes of uniform size.
3 - If they are new potatoes they may be boiled in their skins.
4 - In any case wash them well first.
5 - In paring, remove a very thin layer with a very sharp knife and drop them at once into cold water;
but new ones should be started in boiling water.
6 - Let them cook until tender when tested with a fork.
7 - Add salt when they are partly cooked,
8 - When tender, drain and set in a warm place to dry but without covering.
9 - Sprinkle with salt and if desired, add a little melted butter. Serve uncovered.
