1 - For baking choose medium-sized potatoes with smooth skins.
2 - After scrubbing, and cutting out any dark portions, let them bake 45 minutes or more, until tender
on the rack in a hot oven. (and be sure the oven iss hot when they go in.)
3 - In testing the potatoes, protect the hand with a cloth and squeeze each potato.
4 - When they feel soft, burst open the skin a little to let out the steam, and serve immediately.
5 - Do not cover them.
6 - To make the baked potatoes morem attractive, 3 slits crossing each other in the middle may be cut in one side
7 - Then when the potato is pressed from below it will open flower-like.
8 - A little butter may be placed in the opening and a dash of paprika added.
