Lyonnaise Potatoes II
2 tbsp butter or drippings
1 tbsp chopped onion
1 tbsp chopped parsley
1 - Take cold boiled potatoes, not cooked too soft, and cut them into dice.
2 - Into 2 tbsp butter or drippings in a hot frying pan stir 1 tbsp chopped onion
and cook until it is beginning to brown.
3 - Then stir in the potatoes and keep them well stirred until browned lightly on all sides.
4 - Season with salt and sprinkle with 1 tbsp chpped parsley before serving.
