1 or 2 slices onion
2 tbsp butter
3 canned pimentos
1 - Scrub and pare potatoes and cut into balls or cubes.
2 - After they have been soaked in cold water and been thoroughly dreained, fry until tender
and lightly browned in deep hot fat; then drain on absorbent paper and sprinkle over with salt.
3 - In 2 tbsp butter cook untilm brown (about 3 minutes) 1 or 2 slices onion, then remove the onion
and stir into the butter 3 canned pimentos which have been cut into small pieces.
4 - After they have become well heated through, add the fried potatoes.
5 - Before serving sprinkle with parsley finely chopped.
