Glazed Sweet Potatoes
maple or brown sugar
1 - Boil the potatoes in their skins.
2 - When they are tender and have a thin skin, drain them and pull off the skins.
3 - Then cutting themm lengthwise and putting them in a buttered pan, spread butter over them.
4 - Make a sirup by boiling together for 3 minutes 1 cup brown sugar or maple sugar and 1/4 cup water.
5 - Pour this around tyhe potatoes and baste them often with it while baking in a moderate oven until candied.
6 - More sirup should be added if necessary while baking.
