2 tbsp melted butter
1/2 cp cream
1/2 cp sugar
1 - Boil the sweet potatoes in their skins
2 - When they are tender, peel and mash them.
3 - Then for every 2 cups of mashed potato add 2 tbsp melted butter, a little salt and pepper,
1/2 cp cream and 1/2 cp sugar with a dash of nutmeg grated over it. 4 - Beat separately the whites and yolks of 2 eggs, stirring in the yolks then folding in the whites.
5 - Bake for about 20 minutes, in a single buttered baking dish or individual buttered dishes
with butter dotted over top of the potato mixture.
