Mashed Sweet Potato Caramel
1/2 cp maple sirup
1/4 cp butter
1 - Take boiled or baked sweet potatoes (left-overs may be used), and mash them
seasoning with salt and pepper and adding enough milk to produce a smooth paste.
2 - Take 1/2 cp maple sirup and boil it with 1/4 cp butter.
4 - Pour this over the potatoes in a buttered casserole and let them bake until caramel
begins to form over the top.
