Winter Squash in the Shell
small Hubbard squash
1 - Take a small Hubbard Squash, and, after having cut off tyhe top and scraped out the seeds and mesh,
let it bake inn a pan until tender.
2 - Without breaking the shell, take out the pulp, mash it and season it with butter, salt and pepper.
3 - Fill the shell with the mixture, smoothing the top and brushing it over with beaten egg and milk,
and adding bits of butter.
4 - Let it brown in the oven before serving.
