Stewed Tomatoes II
1 - To remove the skins from the tomatoes, pour boiling water over them, let them drain,
then dip into cold water.
2 - The skins can then be easily slipped off.
3 - Cut the tomatoes into pieces before putting them into a kettle to stew until tender.
4 - Add little or no water, and use for stewing them a kettle of porcelain or granite ware.
5 - Before serving season with salt, pepper and butter.
6 - A tsp of sugar may be added, if desired, and a little flour may be rubbed nto the butter,
if a bit of thickening is preferred.
