Baked Tomatoes, Virginia Style
1 - Take tomatoes of medium size that are ripe and firm; and when they have been well wiped,
prick in several places with a fork before baking until tender in a moderate oven.
2 - Before serving, slip off the skins.
3 - Serve with a sauce made by rubbing together until smooth 3 tbsp flour and 2 tbsp butter and cooking
this thickening in 1 cp thin cream; salt to taste.
